Giniversity Barrel Aged

Nestled in Australia’s Margaret River wine region, Giniversity and Head Distiller Professor Bec Cameron provide short distilling courses that teach artistic expression through gin. One of these expressions has seen their popular London Dry gin nurtured in a French Oak Pinot Noir barrel for six months, creating a faint pink gin perfect for cocktails.

AROMA

Reminiscent of young Chardonnay but spouting a stunning pink rosiness, Giniversity Barrel Aged is both complex and satisfyingly humble. The nose has earthy sweetness that harmonises with citrus, coriander and delicate woody-pine notes. The delivery to the palate is ample, hinting flavours of juniper, lemon and pepper before yielding to a zesty aftertaste.

FAIR Barrel Aged

FAIR Barrel Aged Gin is a collaborative mission with the Dustkul Bogi in Central Asia. The gin is macerated with organic juniper and Fairtrade certified spices before spending a minimum of three months in a French cognac oak barrel. FAIR distils with a Stupfler alembic copper still, so not to strip the gin of nuances – this safeguards the high-quality of their gins.

AROMA

The influence of the cognac barrel mellows the gin and contributes an elevated but refreshing spiciness. The oak adds viscosity introducing a sappy, honeyed mouthfeel.

Kalki Moon Distilling & Brewing Solstice

The city of Bundaberg typically allures rum and cane fields but making emergence is the region’s newest distillery, Kalki Moon. Rick Prosser, Bundaberg Rum’s former Master Distiller, has set his sights on creating gins of exceptional quality. Taking an aged ex-rum barrel and nurturing their Premium London Dry Gin, Rick has created a seductive, matured by the seasons barrelled-gin called Solstice.

Adelaide Hills Distillery 78 Degrees Small Batch Gin

Produced in small batches utilising grape spirit, the 78^o flavour is vapour infused using a unique botanical basket positioned above the distillation column. This method creates a refined approach to flavour addition as only the purest alcohol vapours pass through the basket, drawing the aromatics delicately and infusing individual botanicals to the spirit.
